Swedish Pancakes (Flapjacks)

INGREDIENTS:

  • 3 large eggs
  • 2 cups milk
  • 3 TBSP unsalted butter (melted)
  • 1 1/2 cups flour
  • 2 TSP honey
  • pinch of salt

DIRECTIONS:

  • Beat together the eggs until combined
  • Add in 1 cup of milk and the melted butter, honey, salt, and 1/2 cup of flour
  • Whisk until there are barely any lumps
  • Then add in the rest 1 cup of milk and 1 cup flour
  • Whisk until everything is incorporated
  • Heat a large pan on low heat
  • For every pancake you will use a TSP of butter in the pan
  • You should scoop around 1/3 cup of batter for each pancake
  • Let it cook fully on one side then flip
  • Roll it over in the pan then place on a plate
