SORBET BASE

Some Tips:

If you want a sweeter sorbet, lower the lime juice to 1/4 cup instead.

You can substitute this recipe with any fruit of your choice.

INGREDIENTS:

  • 1 cup water
  • 3/4 cup sugar
  • 1 lb of fruit
  • 1/3 cup lime juice

DIRECTIONS:

  • Pour the water and sugar into a saucepan then boil on medium heat
  • Stir until the sugar is dissolved and then simmer for 5 minutes without stirring
  • Pour into a bowl to cool in the fridge
  • In a blender or food processor, process the fruit until fairly smooth NOT PUREED
  • Add in the syrup you were cooling and the lime juice
  • Pulse until all combined
  • Put into a pan and freeze for at least 2 hours uncovered
  • Use a fork to scrape the frozen edges in and smooth the top again
  • Place back into the freezer for an hour
  • Mix the base again and then cover it to store
