PUMPKIN PRALINE BREAD PUDDING

Some Tips:

For best results, use Challah, Brioche, or Sour Dough bread

INGREDIENTS:

  • 1 loaf of bread
  • 1 cup heavy cream
  • 1 cup half and half
  • 15oz pumpkin puree
  • 1.5 cups sugar
  • 3 TBSP melted butter
  • 4 eggs
  • 2 TSP vanilla
  • 1 TBSP pumpkin pie spice
  • 1/2 cup unsalted butter
  • 1 cup packed brown sugar
  • 1 cup heavy cream
  • 1/2 tsp vanilla

DIRECTIONS:

  • Preheat oven to 350 degrees
  • Grease an oven-safe dish
  • Cut the loaf of bread into 1-2 inch cubes then spread them around the dish
  • In a bowl, whisk together heavy cream , half & half, pumpkin puree, sugar, butter, eggs, vanilla, and pumpkin pie spice
  • Once combined, pour over the bread slowly to cover all the pieces. Gently push down the cubes to ensure everything is coated
  • Bake for 1 hour
  • For the sauce, melt together the butter and brown sugar in a saucepan for 2-3 minutes stirring frequently
  • Reduce to low heat then slowly add in heavy cream then the vanilla
  • Return the medium heat and let it simmer.
  • Then cook for 2-3 mins stirring constantly until it thickens
