Mama's Portuguese Bean Soup

Some Tips:

Make sure to get ham shank

Patience is the key, making sure the meat falls off the bone itself

INGREDIENTS:

  • 2 packages of ham shank
  • 1 can tomato paste (1x red pot, 2x silver pot)
  • 6 red potatoes
  • 1 bag baby carrots
  • 2 portuguese sausage
  • 1 can dark kidney beans
  • 1 box macaroni

DIRECTIONS:

  • Score the ham shank and place into a large pot
  • Fill pot with water until its 1 inch over all the shank
  • Place on high heat and cover with lid (needs air escape hole)
  • Once it comes to a boil, bring it down to heat right below boiling
  • Let simmer for 1 hour
  • Add in tomato paste
  • Let sit on low heat for another hour or so until the meat falls off the bone
  • You can take out the shank and cut off the bone if stuck by ligaments and skin
  • Add in the peeled and slices potatoes along with the baby carrots
  • Once they are cooked, add in the sliced portuguese sausage
  • Then add in the kidney beans
  • Cook the macaroni in a separate pot then combine with the shank
