PEANUT BUTTER COOKIES

INGREDIENTS:

  • 3/4 cup pureed dates
  • 1/2 cup unsalted butter
  • 1/2 cup greek yogurt
  • 1 cup peanut butter
  • 3/4 cup brown sugar
  • 2 eggs
  • 2 1/2 cups flour
  • 11/2 TSP baking soda
  • 1 TSP baking powder
  • pinch of salt
  • 3 TBSP coconut oil
  • 3 TBSP cacao powder
  • pinch of sea salt

DIRECTIONS:

  • Cream together the butter, greek yogurt, peanut butter, dates, and brown sugar
  • Beat in the 2 eggs
  • In a separate bowl, sift together flour, baking soda, baking powder, and salt
  • Mix the dry into the wet ingredients until incorporated
  • Refrigerate for an hour
  • Preheat oven to 375 degrees
  • Roll into 1 inch balls and flatten with a fork two ways
  • Bake for 10 minutes or until it starts to brown
  • Make the glaze by mixing together the coconut oil, cacao powder, and salt
  • Dip the cookies in the mix and then put in the fridge
