INGREDIENTS:
- 3/4 cup pureed dates
- 1/2 cup unsalted butter
- 1/2 cup greek yogurt
- 1 cup peanut butter
- 3/4 cup brown sugar
- 2 eggs
- 2 1/2 cups flour
- 11/2 TSP baking soda
- 1 TSP baking powder
- pinch of salt
- 3 TBSP coconut oil
- 3 TBSP cacao powder
- pinch of sea salt
DIRECTIONS:
- Cream together the butter, greek yogurt, peanut butter, dates, and brown sugar
- Beat in the 2 eggs
- In a separate bowl, sift together flour, baking soda, baking powder, and salt
- Mix the dry into the wet ingredients until incorporated
- Refrigerate for an hour
- Preheat oven to 375 degrees
- Roll into 1 inch balls and flatten with a fork two ways
- Bake for 10 minutes or until it starts to brown
- Make the glaze by mixing together the coconut oil, cacao powder, and salt
- Dip the cookies in the mix and then put in the fridge
