KID'S HEALTHY CAKE

Some Tips:

Other frosting options would be do use whipped cream, greek yogurt, or whipped coconut cream (refridgerate night before to solidify the fat)

You can use 3 5-inch pans to make a tier cake or 1 9-inch regular pan

INGREDIENTS:

  • 3/4 cup (6oz) Whole milk plain greek yogurt
  • 1 cup (240g) mashed ripe bananas
  • 2 beaten eggs
  • 1 TSP vanilla
  • 1 cup blueberries (optional)
  • 1/4 cup coconut oil
  • 1 8oz cream cheese
  • 2 cups (200g) oat flour
  • 1.5 TSP baking powder
  • 1/2 TSP baking soda
  • 1 TSP cinnamon

DIRECTIONS:

  • Preheat oven to 350 Degrees
  • Mix together the wet ingredients (yogurt, bananas, eggs, vanilla, coconut oil, blueberries)
  • Mix in the dry ingredients (oat flour, baking powder, baking soda, cinnamon)
  • Line a pan with parchment paper and oil
  • Fill the pan with batter and spread evenly
  • Bake for 25-30 mins until toothpick test passes
  • Cool cake completely before frosting
