Some Tips:
Other frosting options would be do use whipped cream, greek yogurt, or whipped coconut cream (refridgerate night before to solidify the fat)
You can use 3 5-inch pans to make a tier cake or 1 9-inch regular pan
INGREDIENTS:
- 3/4 cup (6oz) Whole milk plain greek yogurt
- 1 cup (240g) mashed ripe bananas
- 2 beaten eggs
- 1 TSP vanilla
- 1 cup blueberries (optional)
- 1/4 cup coconut oil
- 1 8oz cream cheese
- 2 cups (200g) oat flour
- 1.5 TSP baking powder
- 1/2 TSP baking soda
- 1 TSP cinnamon
DIRECTIONS:
- Preheat oven to 350 Degrees
- Mix together the wet ingredients (yogurt, bananas, eggs, vanilla, coconut oil, blueberries)
- Mix in the dry ingredients (oat flour, baking powder, baking soda, cinnamon)
- Line a pan with parchment paper and oil
- Fill the pan with batter and spread evenly
- Bake for 25-30 mins until toothpick test passes
- Cool cake completely before frosting
