INGREDIENTS:
- 1 1/4 cups oats
- 1 1/4 cup GF flour
- 1 TSP baking powder
- 1 TSP cinnamon
- 1/4 TSP salt
- 1/2 cup butter (softened)
- 2 eggs
- 1 TSP vanilla
DIRECTIONS:
- Mix together the dry ingredients - oats, flour, baking powder, salt
- Puree together the butter, eggs, and vanilla until fluffy
- Mix the wet into dry ingredients until combined
- If it is too dry, add in water
- Preheat oven to 350 degrees
- Place balls onto the pan 2 inches apart and flatten slightly with hands to about 1/4 inch thick
- Bake for 11-16 minutes -- it should be barely set and have golden edges
- Less time = chewy, more time = crispy
