GLUTEN-FREE OATMEAL COOKIES

INGREDIENTS:

  • 1 1/4 cups oats
  • 1 1/4 cup GF flour
  • 1 TSP baking powder
  • 1 TSP cinnamon
  • 1/4 TSP salt
  • 1/2 cup butter (softened)
  • 2 eggs
  • 1 TSP vanilla

DIRECTIONS:

  • Mix together the dry ingredients - oats, flour, baking powder, salt
  • Puree together the butter, eggs, and vanilla until fluffy
  • Mix the wet into dry ingredients until combined
  • If it is too dry, add in water
  • Preheat oven to 350 degrees
  • Place balls onto the pan 2 inches apart and flatten slightly with hands to about 1/4 inch thick
  • Bake for 11-16 minutes -- it should be barely set and have golden edges
  • Less time = chewy, more time = crispy
