Some Tips:
This recipe can be made vegan by replacing the eggs with flax egg
Use 1 TBSP flaxseed meal + 2 1/2 TBSP water
Add in 1 cup of walnuts or pecans for texture
INGREDIENTS:
- 1 Egg
- 3 Medium Ripe Bananas
- 1 TBSP Baking Powder
- 1 TSP Baking Soda
- 1/2 TSP Vanilla
- 3 TBSP Olive Oil
- 1/4 cup coconut sugar/organic cane sugar
- 1/4 cup packed organic brown sugar
- 2 1/2 TBSP maple syrup
- 3/4 TSP salt
- 1/2 TSP ground cinnamon
- 3/4 cup nut milk
- 2 1/2 cup flour
- 1 1/4 cup oats
DIRECTIONS:
- Preheat oven to 375 degrees
- In a bowl combine the egg, banana, baking powder, and baking soda
- Once combined, whisk in the vanilla, oil, sugar, brown sugar, maple syrup, salt, and cinnamon
- Then add in the nut milk of your choice and whisk once more to combine
- Add in the flour and oats
- Grease a muffin pan and fill each about 3/4 of the way
- Sprinkle sugar over the tops of each muffin
- Bake for 28-35 minutes
