BANANA MUFFINS

Some Tips:

This recipe can be made vegan by replacing the eggs with flax egg

Use 1 TBSP flaxseed meal + 2 1/2 TBSP water

Add in 1 cup of walnuts or pecans for texture

INGREDIENTS:

  • 1 Egg
  • 3 Medium Ripe Bananas
  • 1 TBSP Baking Powder
  • 1 TSP Baking Soda
  • 1/2 TSP Vanilla
  • 3 TBSP Olive Oil
  • 1/4 cup coconut sugar/organic cane sugar
  • 1/4 cup packed organic brown sugar
  • 2 1/2 TBSP maple syrup
  • 3/4 TSP salt
  • 1/2 TSP ground cinnamon
  • 3/4 cup nut milk
  • 2 1/2 cup flour
  • 1 1/4 cup oats

DIRECTIONS:

  • Preheat oven to 375 degrees
  • In a bowl combine the egg, banana, baking powder, and baking soda
  • Once combined, whisk in the vanilla, oil, sugar, brown sugar, maple syrup, salt, and cinnamon
  • Then add in the nut milk of your choice and whisk once more to combine
  • Add in the flour and oats
  • Grease a muffin pan and fill each about 3/4 of the way
  • Sprinkle sugar over the tops of each muffin
  • Bake for 28-35 minutes
